This shallot is harvested from the beginning of May to be eaten like a green onion. Towards the end of June it reaches maturity, it can then be harvested and dried for later consumption or replanted towards the end of July. Each bulb will multiply by ten.
According to tradition, it is harvested on St. John's Day, June 24, and planted on July 26, during the feast of St. Anne.
